1868480 - Expand Thunderbird usage telemetry to cover the address book, compose window, and missing pop-ups

MailUsageTelemetry records the buttons and menu items that users click on, from specific places in the user interface. Those specific places don't include the address book or the compose window, and several of the menu pop-ups in areas we do record are not included.
