Steps to reproduce:

Upgraded from thunderbird 115 to thunderbird 128.

Actual results:

My mailing list folders stopped showing who sent the message where the mailing list had to rewrite the sender address because the "prefer display name" setting in the address book that I was using to exclude mailling lists addresses from showing the display name has been removed.

Expected results:

The ability to override "prefer display name" for particular senders should have been preserved or some suitable equivalent functionality should have been provided.

Also bug 1898896 where this was raised and dismissed.

Since you've already done some research, you will have noticed that the feature was explicitly removed in bug 1894048 comment 9. The checkin comment reads:
Remove the PreferDisplayName individual property from the contacts and only respect the global condensedAddress pref.

I mean this isn't really a duplicate of that but I guess that's my answer, that users of mailing lists are no longer of any interest to the Thunderbird maintainers.
