:RT had a quick look and noticed that they're using Jitsi. Maybe they have related problems.
I guess they put that warning up because there's something wrong with Firefox. I know that their other video call service doesn't work with Firefox (see #1944497).
Martin, are you sure this site is using Jitsi ?
If you look at bottom of the page there is a link to the source code :

It says it is using BBB as Jérôme says, and the project is active and clearly contains dockerfiles for your typical BBB infra.
You have to be a public worker to get access. I'll ping the folks committing on this to get some creds or something.
Martin, Romain, if you know that despite all that it's really using Jitsi, I'm also happy to investigate. https://bugzilla.mozilla.org/show_bug.cgi?id=1944497 is about https://webconf.numerique.gouv.fr, which is a different website, and that is said to use Jitsi.

It isn't clear to me that they're saying Firefox isn't recommended.

For context, what is translated as "National Education" is simply our public school system, that's give or take 1 million employees. Somehow they are singled out here (this service can be used by all public workers, but only some can use Firefox for this!?). Note that this doesn't apply to e.g. an engineering school either, that would be a different employer.
They do not recommend Firefox on Android.

Jérôme, did you see anywhere that Firefox isn't recommended for the webinar site? The "Modalité d'accès" section doesn't say that, but I don't have access to the website itself.

This web site can be used by attendees outside the public administration. Only the presenter has to be an employee from the french administration. Thus many people are impacted (possibly more than the number of employee in french administration).
If this is the same issue than with Jitsi-meet, then the conferences are bad when mixing different web browsers (Chrome-Firefox, Edge-Firefox, Chromium-Firefox). However it should work if all attendees use the latest Firefox versions. This could explain why the public school system let the use of Firefox (the teachers ask all student to use Firefox ?).

I have received an answer via email from the developers of this website, and it was just that the text was outdated, they'll get a fix in. Thanks for opening a bug in the first place.
The other bug (bug 1944497) about https://webconf.numerique.gouv.fr is likely real and related to our problems with Jitsi, that are being solved.
I am closing this as INVALID (as it's not a Firefox bug), but the report is very appreciated.
