For myself, I'd like the Get Map function in the address book to use
maps.yahoo.com rather than mapquest, but there's no way to chose
a different site.

Yes. I also want to use other sites than the map quest.
However problem is that different web sites will use different fields, formats,
or parameters to pass. So, it could require to survey those.

This is a possible duplicate of core bug 117154 which also implies there are 
currently hidden prefs (I've not tested them) see
