Background:  I read somewhere on the net about a method for distinguishing
phishing attempts from legitimate mails by assigning a particular email
addresses to a given account. E.g., if my email address is foo@foo.com, and if I
control foo.com, then bank A would be given foo1@foo.com, bank b would be given
foo2@foo.com, etc.  Of course, the specific email address for each bank could be
randomized within the parameters of the relevant RFCs.  If an email from bank A
comes with an address in the To: header that does not match the address I
assigned to bank A then I can be confident that the email is a phishing attempt.
 As more people are able to obtain their own domains and cheap hosting plans,
this kind of thing has become more feasible.  The addresses assigned to each
bank would normally be forwarded to a catch-all address for the domain, though
it is feasible for someone to manually assign address forwarding for each email
address to another address, e.g., if there are more than one real person with a
valid email address under the same domain.

Anyway, what would be nice is if under a given account, usually for the
catch-all address for a domain, a list of possible From: addresses coudl be
added, so that when a person wants to send mail to a certain bank or whatever
the person could select the appropriate From: address for the specific destination.

As a bonus, it might be nice if rules could be configured to automatically
assign the appropriate To: address based on the destination.

This feature exists.  Tools | Account Settings | <account>
    Manage Identities
Once you've defined the identities, you select which one you want to use from 
the From: dropdown in the compose window.

You mean assign the appropriate "From", right?  You want to pick the From: based 
on who's been put in the To: fields?  This is bug 36482; see also bug 200872.
