The plain text wrapping setting in Tools -> Options -> Composition -> General is not applied to messages that are currently being composed. And there seems to be no way of changing the wrap setting for a message that you're currently composing. Well, you can save it as a draft, close it and then reopen it, but that will insert line endings at your current wrapping length, the one that you didn't want. :-)
Would it be possible to either:
(a) change the setting for a single composition window
(b) apply the setting even to composition windows that are already open?

Be aware that, unless you've turned off format=flowed for composition, it makes little difference what the wrap column is, as most clients will display a f=f text message by reflowing the text to the window edge. See bug 168420 for information about f=f, including the informative FAQ attached to that bug.
