being in French keyboard, the editor should encode html with special encodings for accentuated letters, like é for "é". This was done with Mozilla's editor. Can't find it here

This is most likely a DUPLICATE of an already filed bug, like bug 174216
Jean-Michel, when this happens, what is the character encoding your document is using?

Workaround:
If you want control over these issues, then I suggest you use KompoZer 0.77 (http://kompozer.net/) available in French, which is based on Gecko (branch 1.7, build 20060723) where you'll be able to force escaping of accentuated letters. In a few months from now, Composer 2 will be available and will allow more control over all this.
