The "Fonts & Encodings" menu does not provide any way to specify a default font across encoding. For example if a user wanted to use the Bitstream Vera family for everything they would have to manually make this change for every encoding.

Steps to Reproduce:
1. Go to "Fonts & Encodings" menu

Yes, as far as I can tell bug 245340 was a request to fix the same thing.
