It would be really nice to have a configurable limit on the maximum number of recipients in the to: field.
Example: limit is set to 10
When sending a message with more than 10 recipients in the TO: field, a dialog pops up asking "You are about to send an email with more than 10 recipients. Good email behavior is to hide the other recipient email-addresses from the recipients by using BCC: instead of TO: Would you like me to change this for you?" (somebody please come up with a better text: hope you get the idea :-)
If the user replies yes (the default) then all recipients entered as TO: should be changed to BCC: and the email should not be sent (allowing the user to modify this before sending again).
If the user replies no - the email is sent without further warnings.

One could consider if this should be done at the MTA instead of in the mail client. Putting the feature in the client instead of in the MTA makes it a "soft limit"; the user may bypass the warning and send anyway. This is better in my opinion. The mail administrator could still put in a hard limit if he/she wishes :-)
