At startup FF uses the currently system-wide spell checker dictionary selected and it is impossible to change it despite other dictionaries are installed.

Steps to Reproduce:
1. Open FF
2. Go to a site with a textarea
3. Ctrl-click
4. Select Language submenu
Actual Results:  
Just one language is shown.

Expected Results:  
All the installed dictionaries should be listed.

The language shown is the currently selected from the OS X Spell Checker. If you open another application (i.e. Mail.app), choose another language for the Spell-Checker and restart FF, FF will show the new selected language.

I can confirm this bug is still present in FF3 Beta 5 (on Mac OS 10.5.2).
Can't find any news but with latest nightly (Mozilla/5.0 (Macintosh; U; Intel Mac OS X 10.5; en-US; rv:1.9pre) Gecko/2008040204 Minefield/3.0pre ID:2008040204) I was able to install Italian dictionary and switch between installed dictionaries from the context menu. It seems fixed...
