Hi,
When I select a file in the gnome file browser program, right click it, and select the "send to" command, the only option I get is "evolution". This despite setting thunderbird as my default mail client.

That's interesting, I've just found the same here on a test PC so the problem definitly isn't related to your system alone. I therefore think you may need to submit a feature request into the Mozilla Thunderbird team. I know from experience that they are reseptive to enhancement requests.
Out of curiosity, I tested this on a Ubuntu 7.10 box that I have here as well as it is running the same versions of Gnome and associated software as OpenSuSE and Thunderbird is not in the send to context menu either.
If you like, I will submit this as a feature request on your behalf however I suggest you do this your self via mozilla.org as you will then be sent the progress updates if you so choose.
Please let me know if you require any further assistance. Sorry I can not be of more help with this. It does seem to be a general usability issue that has been overlooked by the Thunderbird developers.
I say Thunderbird as aposed to Gnome as from my understanding of the Gnome Panel and Gnome-menus packages, Thunderbird should set variables for these packages to notify them of the change to the default client. However, I am not a developer therefore my understanding of this could be flawd. It would none the less do no harm to submit this as a feature request to Mozilla as it would make them aware of the requirement for future versions and they may decide to communicate with the Gnome-Menu developers directly.

I'm using Ubuntu 8.04 with Gnome, and Thunderbird (2.0.0.16) does show up on my Send To list (along with Evolution). This was most likely done by the packager, however.
It's unclear to me where along the process this should be integrated for Linux, since it's much less homogenous than Windows (where it works) or Mac OS X (where it doesn't, see bug 309708).
Insofar as Thunderbird can tell what it's running under, though, I think it makes sense for it to try and integrate with the windowing system, so I'll confirm it and see if anyone else thinks otherwise.
