It will be set back to 10 Minutes before. However, changing it in Google Calendar and then updating the local calendar works, the reminder disappears.

This is actually a bug (or feature) in the Google CalDAV implementation which always appends the default calendar alarms to newly created events.

Is it valid for old (modified) events too? It seems strange it is a feature because from Sunbird\Lightning side you can add and modify reminders but you can't delete them.
Do you know if there is any issue, link or note from Google?
I have found only an identical issue about iPhone:

that the users solved turned off the default notifications in Google calendar settings.
I did the same on my Google calendar (settings->calendars->notifications->no default reminder) but doesn't work, Lightning can't delete the reminders.

I set "settings->calendars->notifications" to "no default reminder" - Sunbird now creates events on Google Calendar without a reminder.

Yes, but if you setup a reminder to an event (with Sunbird or Google Calendar) you can't anymore delete it with Sunbird, you can delete the reminder only with Google Calendar.
To be sure I've just tried with the latest Sunbird and Lightning nightly.
Can you confirm this behavior?

You are correct... if I create an event in Sunbird with a reminder, I cannot delete the reminder from within Sunbird. So something is still amiss.
I think this bug can get the confirmed status for comments #1, #3 and #6.
Maybe we can revert the status to unconfirmed or resolved invalid if someone knows some detail about comment #2.

Does this still happen with 1.0b1 and 0.6b1 ? I didn't see many support requests related to this bug after the release...

Yes, it still happens. I had to turn off reminders on Google Calendar in order for this to not be a problem for me.

I cannot save new events w/reminders other than global setting using Lightning. It just says No Reminder. All other google syncs w/reminders function correctly.

I can confirm this, although it seems to be a server issue. Google knows about this and will eventually fix it. If it turns out we need to send something differently I will reopen this bug.
