It would be useful if there were undo/redo buttons available in the Customize mail toolbar dialog box.

Sounds like something more for an extension to me.

It could be an extension, but Undo and Redo buttons are available in many applications, and it seems a curious omission when the functionality already exists on the the Edit menu.  The Undo and Redo buttons could be available in the toolbar customizer, so that the user can optionally add them to the mail toolbar, but they would not appear on the default mail toolbar.

The visibility of Undo is a serious problem, as noted in bug 308063

I agree, any respectable editor has this.  We're not hurting for toolbar space - we should do this, in compose.  Filed bug 1490397
