I don't know what fonts we can assume exist on all platforms.  (should add a reference to the "ship-our-own-good-font-with-thunderbird" bug)

Here is a list of fonts available on both Windows and Mac: http://www.ampsoft.net/webdesign-l/WindowsMacFonts.html

Maybe do as Ikea, and go with Verdana? [1]
For Linux systems, Bitstream Vera Sans (or the fork, Deja Vu Sans that have more characters) is probably a safe bet.
