By default, I'm writing all my email in text only.
For now, it seems that if you want to switch to html temporarly (or reverse),
- you can change this in accounts preferences -> no way to do it for one e-mail
- you can't change it for en e-mail you are replying (?forwarding)
Note: I display e-mail in text also. doesn't seem to change if i display in simple html. probably depends on e-mail format.

Steps to Reproduce:
1. put in text redaction mode
2. write/reply to an e-mail
3. try to switch in html
Actual Results:
Non-intuitive and multiple actions
Menu "options" have "format" choice for html only, text only, both, auto-detect but it does not exist when writing in text mode
Expected Results:
Menu "format" in "options" must be present in every redaction mode.

this feels like a duplicate for the plain text to html switch action
