Missed regenerating the checksum files for the rebuilt source tarball. Not a big worry, the RC2 and this new source tarball have exactly the same content, they only differ in timestamps.
I'll be regenerating/resigning these checksum files, but for the record, the *correct* checksums for the 3.1 source tarball should be:
MD5SUMS:feb4d737d568066076879a09bd0d506e ./source/thunderbird-3.1.source.tar.bz2
SHA1SUMS:89e9d8099a5437ce401577fc4d526eb0dd9e51da ./source/thunderbird-3.1.source.tar.bz2

That's a build configuration issue: --enable-official-branding

Checksums updated and published. Mirrors should pick them up soon.

Thanks Philippe,
the user was already using that switch. After some discussions with the original reporter, the problem seems to be only with the "Welcome page", not with the product name itself (which is correctly set to Thunderbird).
BTW a similar problem was reported today by another user on mozilla.dev.builds

Which welcome page you get is determined by the build id. Therefore if you build your own version, you'll get the shredder page as it has a different build id to the official version.

I don't it was a problem on the user side, not the pages display the correct product name
