Details

When I open an .eml file like a file "email.eml" which is a file containing email headers and the body of an email, the file's modified date-stamp gets modified.

How did you open the .eml file at where by what operation?

"What field's value of what kind of data obtained by what operation" do you call by your "date-stamp"?

On Windows 7, I right clicked the .eml file and selected 'Open with' and then opened the file with Mozilla Thunderbird.

"Date modified" value at where of what? "Date modified" column of Windows Explorer?
If Windows Explorer, "Property" of the .eml file shows all of creation date, modified date, last access date.
What timestamp is shown for the .eml file?
Is there any difference between the "Property" and timestamp shown by DIR command at Command Prompt of MS Windows?
  Creation timestamp : DIR email.eml /TC 
  Write    timestamp : DIR email.eml /TW 
  Access   timestamp : DIR email.eml /TA 

Does your problem occur on any .eml file in any directory?

"Date modified" of the .eml file (also accessible by right-clicking file and selecting Properties)

"Date modified" (Last Written) stamp has changed.

Yes.

I think this lengthy topic on Microsoft support set this bug as invalid for Thunderbird. Windows modifies the file to store the indexing data in another stream on mouseover.
