eg, i want to build browser and homescreen, but nothing else.

would be great to be able to do APP=browser,homescreen DEBUG=1 make && {run gaia}

Is there a valid use case for doing this with DEBUG profiles? Or is this mainly for pushing apps to a device? I can see this being useful for pushing apps to a device.

I wanted to do it for testing patches in DEBUG or device.

In the status quo, if I make two changes, one in each app, I have to build all of Gaia to test it.

or make twice, once for each app.

Sounds good. Just a note that you should not need to rebuild for DEBUG profiles. A simple refresh should do it.
