Steps to reproduce:
Used OSX (command-K) search window
Selected 'open email as list' option from results window
Actual results:
'open email as list' results' list displayed without Subject column. Subject column also not available from drop down options (see screenshot)
Expected results:
'open email as list' results' list including Subject column displayed
Similar but not the same as bug 1609391 because can't use "apply columns to ... <account> Inbox" as resuls are pulled from all accounts.
I have tried "Restore Column Order" but not worked.
Is it a corrupted preference file?

Does it return if you deselect any of the other columns using "Select Columns to Display"?
It appears that Subject is the only default column and is not in the display list.
I can resize it to the left so it disappears after setting up my columns exactly like yours.
Subject reappears when I deselect Unread , and appears to stay partially visible requiring me to resize it to the right in the columns. My other columns are not as wide as yours in your screen shot. Maybe Date is too wide.
You could also try safe mode using Help > Restart with Add-ons Disabled to see if an extension is interfering.
I think this is simply a corrupt global index. Please rebuild it.

Such situations where the search index is out for date are common enough for us to have a support article describing the process.
Unfortunately, global index rebuilding did not work.
I have previously tried deselecting all optional columns to see if any 'hidden' columns are revealed; and also selecting Restore column order options - neither worked.
Disabling extensions - did not work

I could use some clarification.
You use the Search Bar to do a search for a particular subject.
Then in the Search results click "Show results as list".
The list opens a Thread pane appearing list with "Subject" missing, but you have "Subject" in the 3-pane view Thread pane?
Have you tried a test profile?
"Subject" does appear in the 3-pane view Thread pane (when viewing normal in-coming/inbox message list).
Does not appear any search results view eg in Classic/Wide or Vertical view.
Yes, it does appear in new/test profile.
How do I transfer all the contents and accounts of my old profile to a new one?

I don't think you need to go to that extreme. see bug 1609391 comment 4

I think bug 1609391 refers to issue occuring with inbox list not search results listing.
I had already tried resetting columns without success.
Is there a way to transfer all the contents and accounts of my old profile to a new one?

Is the 'Subject' column header missing in all of your folders including any in the 'Local Folders' mail account?
If yes, if you create a new folder in the 'Local Folders' mail account, is it created with a 'Subject' column ?
If yes, then use as follows.
If you locate a folder that does have a 'Subject' column:
Select that folder - click on the column header icon > select 'Apply columns to' > 'folder and its children'
Choose the account and then click on the actual account name.

The issue refers to the Search Results List view only (the results list that is displayed after using Ctrl+K).

Are you using the most up to date release 91.4.1 ?
Exit Thunderbird
Access the 'Profile name' folder.
Delete these files:
session.json
xulstore.json
start Thunderbird.

Deleted Session.json and xulstore.json, restated TB , made a search with ⌘+K then selected "show results as list" but still no Subject column in the results list.

I have found a solution:
I noticed that "subjectCol" settings in prefs.js had somehow set itself to "false".
" ... user_pref("mailnews.database.global.views.global.columns", "{"selectCol":{"visible":false,"ordinal":"1"},"threadCol":{"visible":true,"ordinal":"3"},"flaggedCol":{"visible":true,"ordinal":"5"},"attachmentCol":{"visible":true,"ordinal":"7"},"subjectCol":{"visible":false,"ordinal":"9"}, ... "
After changing to "true" and saving file as 'user.js' the subject column has now reappeared in the global search results list.
