Steps to reproduce:
Suddenly while using the thunderbird mail app the "Subject" column has hidden and I am not able to find any option to display it back.

I think it's there. Maybe you dragged other columns so Subject is now too small to see. Try resizing the columns next to where it should be.
It's not usually in the Customizable list because it should not be removed.
@Magnus, Thanks for looking into this. But, I tried resizing the columns and it's not there. This had happened for other folders too. But, for those folders, I used to create another folder and move all the emails. So, this is how I was managing it. But, for the default inbox, I am not able to do so. Thus, I had to report for this.

I agree with Magnus, it should be in that "..." area off to the right. I think it is not possible to deselection Subject column

A workaround (which you shouldn't need to use) - pick any other folder, and use "apply columns to ... <account> Inbox"
@Wayne, I have attached a new image after taking all the columns at left so that you can see no column is hidden at right. Also, where can I find the option "apply columns to ... <account> Inbox"?

At the bottom of the columns context menu, which is in your first screen shot.

We have two other reports of this issue
- Bug 1623502 - column subject has disappeared
- Bug 1615681 - Subject column has disappeared in Search results list
All in the time period that we increased updates to version 68.
The very first instance of this I ever saw was Mitchel Baker, about the time she was blogging about Thunderbird future. But there does appear to have been a significant uptick in these sorts of issues post 68.
My assumption is we are disabling an addon that has added columns to the list that are meaningless without he addon to supply meaning. The spike in occurrences in support forums would indicate that something is wrong, just I am not sure it is a bug.

Yes indeed, there has been an uptick. I feared it would get much worse, but I think the reports have dropped off

Perhaps add-ons which are not being recognized as "not compatible", which should be happening less
