This also happens on the Mac. I have even set the offending account as the
default mail. When I try to subscribe to the send folder, it doesn't appear on
the drop-down menu.

Is this for IMAP mail? There have been some recent fixes around several
different apparent hangs when copying messages to the Sent folder; see in
particular bug 287658, bug 123063, bug 163951.
The fixes for those are in 1.5b1 and branch builds as well as trunk builds.

No, it's POP. I tried the latest build for Sept 10 and the bug is still there.
When I select the "place a copy in:" in the account and then select "sent folder
on:" and my e-mail account, it doesn't work. When I go back in it is unchecked
again. I do not use a secure connection or authentication. The bugs you listed
don't appear to be describing my bug. There is no hanging involved.
Thunderbird 1.5
Same happened when one or more multiple e-mail accounts “Copies& Folders” settings changed from personal to global. Personal Sent and Drafts has been deleted while settings are still directing copy of a messages and drafts to those folders. No error has being displayed.
Solution:
Set Copies and Folders – Sent and Draft to existing Global folders you want.

JD Roumeliotis, Ken Rohrer: is this bug still a problem for you?

There was just a similar bug uncovered which made it impossible to save setting changes for an account. In this case, there was an error seen in the Error Console (known as JavaScript Console in 1.5 and earlier versions), which is accessed from the Tools menu. If this is still a problem, please check that console and see if there's an error. (Best to open the console first and clear any existing errors before trying to reproduce the problem.)

I trashed all the preferences and accounts and started all over again. This was the only way I was able to make it once again place the messages in the sent folder. I don't know if it is still a bug because I resolved it by starting over.

Reporter, does the issue still occur with the latest supported 2.0.0.x / Shredder trunk nightlies?
(1.5.0.x is now end-of-life and the latest supported Thunderbird version 2 is 2.0.0.16)

Reopening:
1 month ago user in the company I'm working have experienced this bug (Thunderbird 2.0.0.14 + POP3).
At first I've created another folder and set to place there sent e-mails and it worked, later IIRC I've rebuild the index of the sent folder and after this the error had disappeared.
The full error is as follows (translation from polish):
Confirm:
There was an error while copying message to the sent folder. Do you want to retry the attempt ?
