Add a profile-switching and Sync operations menu in the app-button.
By selecting a profile, open it like 'firefox --no-remote -p %profilename%'

It was WONTFIX'ed a long time ago in bug 214193.
But the Profile Manager UI itself will be removed from Firefox soon (see <http://www.ghacks.net/2011/01/19/firefox-profile-manager-to-be-removed-soon/>), and it will be replaced with an application for the people that want profiles (see <http://jagriffin.wordpress.com/2011/01/11/profilemanager-1-0_beta1/>). It will be a bit different though, you won't be able to switch profiles on the fly (which would require a full restart anyway !).
I don't want to be able to switch profiles on the fly. I want to open a new window with a different profile. Something similar to how it is implemented in Chromium.

That's not possible at the moment - there can be only browser (with 1 profile) active on your screen, as it's used to share cookies, bookmark, history and other resources among the different windows. Maybe the app will allow you to launch multiple browsers (with different profiles), just like the developers have been doing, but I don't know about that.
