User Agent: Mozilla/5.0 (Windows NT 10.0; Win64; x64; rv:109.0) Gecko/20100101 Firefox/116.0
Steps to reproduce:
Updated Thunderbird to 116.0 Beta 1.
Actual results:
User interface is not convenient, like it was in TB 110. Now using this old version forever.
Expected results:
Should be an option to switch back user interface like it was in TB 110.

Already there are many ways in which the new UI can be made to make the out of the box supernova UI be much like TB110 and prior.
If you want accomodatation then your request needs more clarity and a narrow scope, because clearly rolling back to or providing the entire TB 110 experience is not possible.

Just look at Menu Bar (image attached above) - if I add it on new version - it occupies vertical space (it is very important). In old version - everything was perfect. Why to ruin the things, which worked perfectly? The goal is to achieve this kind of simplicity in new versions of TB.

Agreed, the new UI does take a little more space. But it sounds like you are asking for everything in that old UI, icons, quick filter. We're not going to offer that. The UI is moving forward with modern backend which allows consistency of zoom, density and other capabilities, better maintainability, accessibility, etc. https://blog.thunderbird.net/tag/supernova/ offers some background

AT the moment - would be enough to fix Menu Bar - to be able to place it to upper bar.
